The Apple Pay option (for supported countries) is not available when trying to pay for the subscription, only the credit card.
The phone has to be set up for Apple Pay/Google Pay by adding a credit card before the choice will appear. Please navigate to phone Settings > Wallet & Apple Pay> Add Card.
